Sodium diacetate is a preservative, sequestrant, acidifier, vore agent and molecular compound. In simpler terms, it is an acetic acid that produces acetic acids. Where is Sodium Diacetate used?
Sodium diacetate is a common preservative and flavour enhancer and is considered safe to consume. It consists of acetic acid and sodium acetate and has a chemical formula with the symbol NAH. Its crystal lattice is locked, and the acetic acid molecules are crystalline compounds that break down into solution.
Sodium diacetate is used by food manufacturers for the same reason: to ensure that a variety of foods have sufficient acidity to protect them from rot, but not so acidic that they have an unpleasant taste. It dissociates hydrogen acetate and sodium ions, which are normal components of plant, animal and human foods. Sodium acetate (CH3COona) is a solid-state salt; it is not used as an acid base in anhydrous liquid form.
As a food flavouring agent, sodium diacetate can also be used to add vinegar flavour to snacks, breads and even soups.
How do manufacturers produce Sodium Acetate?
Sodium acetate, which is created by the reaction of acetic acid, can be processed to become vinegar and sodium carbonate and can also be used in the form of washing powder. As a result of this invention other complex acetate salts can be controlled by combining undissociated acetic acid with non-toxic, water-soluble complex salts e.g. Alkali metals such as sodium or potassium salts. Unlike sodium diacetate, free acetic acid contains no obvious or negligible odour.

It can be produced with special devices by mixing vinegar with baking soda. One of the goals of this invention is to provide new and improved compositions with complex acetate salts such as sodium diacetate, stable enough to be transported and stored. It is a free-flowing, acidic sodium salt that can be used as an aroma, preservation and pH buffer for food.
Young Bunzlauer Sodium Lactate and Sodium Diacetate are colourless, yellowish, syrupy liquids with a slightly characteristic odour and salty taste. Experiments have shown that anhydrous salts work better than sodium acetate as trihydrate table salt for airport runways.
